Caplinger's crab cakes recipe
Great Day TV host Patty Spitler is a big fan of Andrew Caplinger's new crab cakes!
1 pound jumbo or colossal lump blue crab meat
1 cup grated Parmesan cheese
3/4 cup mayonnaise
1 tablespoon lemon juice
Mix all ingredients with the exception of the blue crab. Then fold in the blue crab meat. Make into patties and place in a preheated nonstick pan on medium heat. Let cook for 3 to 5 minutes per side. If you want to make it even easier, place the crab mixture into a cupcake pan and bake at 350 degrees for 18 to 22 minutes.
