Red Snapper Parmesan

2 pieces of 8-10-ounce genuine red snapper fillets

1/2 cup mayo

1/2 cup shredded parmesan cheese

Mix the mayo and half of the parmesan cheese. Spread the mixture on each fillet evenly. Dredge the fillets through the remainder of the parmesan and press the parmesan into the fillet gently to help it adhere to the fillet.

Preheat a non-stick skillet to medium heat.

Place the fillets in the skillet and cook for 3-5 minutes per side.
