Make Caplinger's Seafood Paella with chicken

Andrew Caplinger of Caplinger's Fresh Catch recently whipped up a paella dish with seafood and chicken, as seen on Great Day TV. Want to try it at home? To make Caplinger's Seafood Paella with Chicken, start from scratch!


2 bags Vigo Yellow Rice Mix

1 bag frozen Corn, green beans and carrots

1 pound Andouille Sausage

1 pound Gulf shrimp (peeled and deveined)

4 cups chicken stock

1 cup chopped onion

2 dozen Littleneck clams

2 pounds New Zealand green-lipped mussels

1 pound chicken thighs (cut into cubes)


Bring chicken Stock to a boil, add the rice and vegetables. Cover and let simmer for 10 minutes stirring occasionally. Add the sausage and chicken. Let cook for 5 minutes. Add shrimp, clams and mussels. Cover and let cook for additional 5 to 10 minutes.

Serve and enjoy!
