I have fond memories of growing up in a small town that hosted a Fall Festival every year. One night during the festival, folks gathered on the town square for doughnuts and apple cider. This cake takes me back to those days. -- Mimi Pearce
Apple Cider Donut Cake
1 yellow cake mix
¾ cup apple cider
¼ cup water
½ cup applesauce
1 tsp. vanilla
1 tbsp. brown sugar
1/8 cup cinnamon
¼ cup sugar
¼ cup melted butter
Preheat oven to 350 degrees. In a large mixing bowl, beat the dry cake mix, apple cider, applesauce, water and eggs.
Add in brown sugar and vanilla to the cake mix batter.
Pour the mixture into a well-greased bundt pan.
Place bundt pan on center rack and bake for 30 to 35 minutes. Test the center of cake with a toothpick to make sure it is done. Remove from heat and allow to cool on a wire rack for 20 minutes. While cake is cooling, mix cinnamon and sugar.
Once the cake is cool, brush the entire surface of cake with melted butter. Rub cinnamon sugar mixture until the whole cake is evenly coated.
Serve with a big glass of apple cider!
