Our Designing Woman, Mimi Pearce, recently whipped up a batch of pumpkin muffins for a late summer treat. Here's her easy recipe so you can do it, too!
Two ingredient pumpkin muffins
1 box of spice cake mix.
1 15-ounce can of pumpkin puree (not pumpkin pie mix).
Preheat oven to 325 degrees.
Mix cake mix and pumpkin puree. If batter seems too thick, add a little water.
Spoon into well-sprayed muffin tins or use liners. I use liners because there are so many colorful liners in stores.
Bake 18 to 20 minutes.
