Sheila's shrimp and cheesy grits recipe

4 cups water Salt and pepper 1 cup Quaker Old Fashioned Grits 3 tablespoons butter 2 cups shredded sharp cheddar cheese 1 pound Caplinger's shrimp, peeled and de-veined 1/2 pound bacon, cooked and chopped (save grease) 1/2 lemon juiced 4 tablespoons chopped parsley 1/4 cup thinly sliced scallions Salt and pepper to taste 1/2 large garlic clove, minced
DIRECTIONS
Bring water to a boil. Add salt and pepper. Add grits and cook until water is absorbed, about 15 to 20 minutes. Remove from heat and stir in butter and cheese.
Rinse shrimp and pat dry. Fry the bacon in a large skillet until browned; drain well. In 2 tablespoons of grease, add shrimp. Cook over medium until shrimp starts to brown (about 90 seconds) and turn with tongs. Squeeze 1/2 lemon to add juice, add chopped bacon, 1/2 the chopped parsley, scallions and garlic. Sauté for 3 minutes, stirring constantly.
Spoon grits into a serving bowl. Add shrimp mixture and mix well, garnish with remaining parsley. Serve immediately.
