Andrew Caplinger's seafood-on-a-roll

Andrew Caplinger of Caplinger’s Fresh Catch Seafood Market loves to grill on his deck! Here is his latest recipe for seafood lovers who also like to grill at home:

Caribbean Style Crab and Lobster Rolls

2 1-pound lobster tails

2 1-pound king crab legs

½ cup mayo

¼ cup chopped red onion

¼ cup chopped red pepper

¼ cup chopped celery

¼ cup orange juice

Pinch of chopped rosemary

1 tablespoon chopped chives

1 sliced avocado

Split the lobster tails and baste them with butter. Put the lobster tails and king crab legs in the preheated grill (400 degrees) and cook for 12 to 16 minutes. Remove and let cool. Remove the crab and lobster from the shells and chop the meat into bite-sized pieces. Mix all of the ingredients and refrigerate for at least one hour. Serve on a roll or your favorite bread.

Add avocado slices as desired.
