Andrew Caplinger, of Caplinger’s Fresh Catch, uses different recipes for his fish tacos. You can pick and choose what sounds best for your meal!
Batter recipe
1/2 bag Caplinger's Famous Recipe Breading
2ea Eggs
1.5 cups Sparkling/Seltzer Water
Mix all ingredients to a runny batter consistency.
Dip fish or seafood into the batter coating thoroughly. Drop in to 350 degrees oil cook till golden brown.
Sauteed Langostinos
1 each serving, Epicurean Chilie Lime Butter
1 pound Langostino or Shrimp
Season to taste with your favorite seasoning.
Melt butter in pan and add seafood. Saute for 4 to 6 minutes depending on thickness of the seafood. Season to taste.
Cilantro Cream
1/2 cup Sour Cream
1/8 cup Ranch Dressing
2T Minced Cilantro
2T Minced Watermelon Rind
Mix all ingredients and serve.
Pico de Gallo
1 cup Small Diced Tomato
1/4 cup Small Diced Onion
1T Chopped Cilantro
1/2 Lemon squeezed
Small Diced Jalapeno to taste.
Salt to taste.
Mix all ingredients and let sit for at least 1 hour before serving.
Guacamole
1 each serving Large Ripe Avocado (Remove from skin and discard pit)
1/3 Cup Small Diced Onion
1/3 Cup Small Diced Tomato
1/4 Cup Sour Cream
1/4 Cup Small Diced Cucumber
1/2 Lemons Squeezed
2T Chopped Cilantro
1/2 tsp Salt
Mash avocado and add all ingredients.
