When Andrew Caplinger whips up a seafood dish, you can bet it'll be tasty! Andrew, owner of Caplinger's Fresh Catch Seafood Markets, offers a savory lobster dish you can make at home:


Creamy Lobster Tortellini Scampi

 

Serves: 4-6

Perfect with crusty bread or garlic bread

 

Ingredients

 

1 package cheese tortellini

1 lb lobster meat

¼ cup fresh chopped garlic

2 sticks butter

¼ cup heavy whipping cream

1 teaspoon garlic salt

¼ teaspoon crushed red pepper flakes

½ cup shaved Parmesan cheese (for the sauce)

1 cup cherry tomatoes, halved

 

Garnish:

 

Green onions, sliced

Additional shaved Parmesan cheese

 

Instructions

 

Cook the tortellini

Bring a large pot of salted water to a boil.

Add the cheese tortellini and cook for 4-6 minutes, until tender.

Drain and set aside.

Build the scampi base

In a large skillet over medium heat, add the butter and let it fully melt.

Add the chopped garlic and cook until fragrant and softened, stirring constantly to avoid browning.

Cook the lobster

Add the lobster meat to the skillet.

Cook for 4-6 minutes, stirring gently and continuously.

 

Create the cream sauce

 

Stir in the cherry tomatoes, heavy whipping cream, garlic salt and crushed red pepper.

Bring to a gentle simmer and allow the sauce to thicken slightly.

 

Bring it all together

 

Add the drained tortellini directly into the skillet.

Gently toss to coat everything in the sauce and let simmer for 2-3 minutes.

Remove from heat and sprinkle in ½ cup shaved Parmesan, stirring until melted.

Serve hot, garnished with green onions and extra shaved Parmesan.

Pair with your favorite bread.
