If you're looking for a fresh new dish to perk up your summer, look no further than Caplinger's Fresh Catch!
Andrew Caplinger has put together a seafood combo that will make your tastebuds happy, just like he demonstrated on Great Day TV with Patty Spitler.
It's called Scallops and Shrimp Ceviche with Mexican Street Corn, and it's easy to make at home. Just follow the recipes and start planning your meal!
Mexican Street Corn
4 cups freshly shocked corn
1/4 cup diced onion
1/4 cup diced yellow pepper
1/4 cup diced red pepper
2/3 cup Hellmann's Mayonnaise
1 diced Jalapeño
Chopped cilantro (use as much as you prefer)
1/4 parmesan cheese
Mix all ingredients in a bowl and refrigerate for one hour or longer. Serve topped with shrimp and scallop ceviche.
Scallops and Shrimp Ceviche
1/2 pound Search Scallops
1/2 pound cooked shrimp
1/2 cup lemon vinaigrette
Slice sea scallops into thin strips and cut the shrimp in half. Add all ingredients to a bowl, toss and let marinade from 1 to 12 hours. Serve on top of the Mexican Street Corn and garnish with lemon/lime and fresh cilantro.
