You saw Andrew Caplinger whip up a delicious risotto dish on Great Day TV, and now you can make it at home!
This is a great side dish to pair with your favorite fish entree.
From the kitchen of Caplinger's Fresh Catch, here's the recipe:
CREAMY MUSHROOM RISOTTO
16 oz Arborio Rice (any short grain rice) 3 cups chicken stock 2 tablespoons butter 8 oz fresh mushrooms (any variety) 1 can coconut cream Salt and pepper to taste
How to prepare
In a medium sized saucepan melt the butter. Then add the stock and bring to a boil.
Add the mushrooms and rice.
Lower heat to simmer and cover, stirring occasionally. After 15 minutes, add the coconut cream. Stir and bring back to a simmer. Let cook covered for an additional 5 to 10 minutes.
Let sit for 15 minutes.
